Sweet and Sour Crispy Fish Ingredients:
1 carp (filleted and cut into 3x5cm)
1 slice of lime
1 pack Kobe Kentucky Super Crispy Flour (210 grams)
140 ml of water
300 ml cooking oil
Sweet Sour Sauce Ingredients:
4 tablespoons of cooking oil
3 cloves garlic (bruised and finely chopped)
1 piece of ginger (bruised)
1/2 onion (sliced lengthwise)
2 tablespoons fish sauce
4 tablespoons of tomato sauce
2 tablespoons of sugar
salt to taste
200 ml water
100 grams pineapple (cut into squares)
1 teaspoon vinegar
1 pack of Kobe White Seasoned Flour (75 grams)
30 ml water
How to make Sweet and Sour Crispy Fish:
Step 1.
Wash the fish thoroughly, coat with lime and set aside.
Step 2.
Dissolve 70 grams of Kobe Kentucky Super Crispy Flour with 140 ml of water until there are no lumps.
Step 3.
Put the fish fillets into the wet mixture.
Step 4.
Prepare the remaining Kentucky Super Crispy Flour Kobe in a separate container.
Step 5.
Roll the fish fillets in the dry flour until they are evenly coated.
Lightly pinch fish fillets.
Step 6.
Fry in hot oil until cooked and golden brown.
Step 7.
Lift and drain.
How to make Sweet and Sour Sauce:
Step 1.
Heat the oil.
Step 2.
Saute garlic and ginger until fragrant.
Step 3.
Add the onions and saute until wilted.
Step 4.
Add fish sauce and tomato sauce.
Step 5.
Add sugar, salt and water. Cook until done.
Step 6.
Dissolve 3 tablespoons of Kobe White Seasoned Flour with 30 ml of water. Set aside.
Step 7.
Add the vinegar, pineapple slices and the Kobe White Seasoning Flour solution into the garlic stir fry. Stir until smooth and thickened.
Step 8.
Arrange the fish on a plate then drizzle with sweet and sour sauce.
Step 9.
Sweet and Sour Crispy Fish is ready to be served with a plate of warm rice.
